Summer Chicken Salad

Summer Chicken Salad

This is a fast and easy recipe that makes a great sandwich. I like to make it when I've got left over chicken. If you happen to have fried chicken leftovers, remove the breading and skin and use the meat, it adds some extra flavor to an already delicious dish!
